Seviyon(Vermicelli) ki Biryani

Cooking Time : 45 Minutes Makes 3 - 4 portions Ingredients: Vermicelli 250 gm Mutton – medium pieces 1/2 kg Onions, finely sliced 3 nos Ginger paste 3/4 tsp Garlic paste 3/4 tsp Green chilly paste 6 chillies Turmeric powder 1/4 tsp Red chili powder 1 tsp Fresh green coriander, 1 small bunch Chopped Mint Leaves, chopped 1 small bunch Yoghurt, whisked 1/2 cup Coconut milk ¾ cup Lemons juice 1-2 lemon Cinnamon stick 1/2” piece Cardamoms 4 Cloves 4 Peppercorn 1/2 tsp Caraway seeds 1/2 tsp Oil 1/3 cup Ghee 1/3 cup Salt to taste |
Preparation:
1. Heat one tablespoon of oil/ghee. Stir fry the vermicelli for about 4-5 minutes on medium fire, till golden brown. Set aside. 2. Grind Cinnamon, Cardamom, Cloves, Peppercorn and Caraway seeds in the grinder. 3. In a heavy bottom pan, heat ghee and oil. Add the sliced onion and fry till golden. 4. Add ginger and garlic and the green chillies. 5. After a minute or two, add salt, turmeric, red chilli powder and a little of the chopped coriander and mint. 6. Add meat and fry till slightly brown in colour. Add yoghurt and cook for another 4 -5 minutes. 7. Add 1 cup of water and cook till the meat is tender. 8. Add coconut milk to the meat and remove from the flame. Gently, Mix in the vermicelli. 9. Sprinkle the balance coriander & mint Add ground spices and lemon juice. 10. Cover and cook on a medium – slow flame till vermicelli is cooked (Approximately 5 to 8 minutes. 11. Ensure that the vermicelli doesn’t get overcooked or mushy. |
