Dumpukht Biryani

Makes 6 – 8 portions
Ingredients:
Mutton/lamb 1 Kg
(cut into small pieces)
Basmati / Long grain rice ½ kg
Onions Paste 250 gm
Ginger Paste 2 tsp
Papain /Raw Papaya 1 tsp
Paste
Black Pepper Powder 1 tsp
Cumin Powder ½ tsp
Cloves Powder 1/4 tsp
Black cardamom powder1/4 tsp
Yoghurt, whisked 4 cups
Ghee 3 cup
Oil 1/3 cup
Saffron pinch
Milk ½ cup
Salt to taste

Preparation:
1. In a bowl mix ½ yoghurt, salt, spices, saffron, onion paste and the ground ginger and the papaya paste. Rub the mixture well into the meat. Rest for 1 to 2 hours.
2. Mix together ghee and Oil
3. Wash Rice. Add the balance Yoghurt, 1 glass water and little salt and Mix well.
4. In a heavy bottom pan, heat 3/4th ghee oil mixture. Add Meat to it.
5. Spread the rice mixture over the meat. Sprinkle over with the balance ghee oil
mixture.
6. Cover the pan with a tight fitting lid and seal with dough.
7. Cook first on a high flame for 5 -10 minutes, then reduce the flame and cook for a
further 25 to 30 minutes
8. Remove from flame and let it stand covered for further 15 – 20 minutes.
9. Serve Hot accompanied with Raita.
Note: If
done well, the meat should be tender and each grain of rice, though fully
cooked, should stand out separately.
